Sažetak
Objective: The survey and anthropometric measurements were conducted to assess nutrient intakes and food consumption patterns for people with celiac disease who adhere to a gluten-free diet. In Croatia there is no data about nutrition and dietary habits of people with celiac disease. The purpose of this research was to establish are Croatians with celiac disease consuming recommended amounts of macro and micro nutrients. Design: Nutrient intake was determined by using 3– day-dietary record combined with 24 h recall in 20 celiac patients (13 female, 7 male). Results: Groups mean daily intake of nutrients by gender (by 24 h recall): Females (n=13): 2053 kcal ; 52, 85 % carbohydrate ; 18, 83 % protein ; 38, 51 % lipid ; 14, 58 g dietary fiber 679, 99 mg calcium and 12, 25 mg iron. Males (n=7) 2158 kcal ; 54, 88 % carbohydrate ; 11, 97 % protein ; 34, 54 % lipid ; 19, 63 g dietary fibre 750, 14 mg calcium and 14, 58 mg iron. Groups mean daily intake of nutrients by gender ( by 3– day-dietary record): Females (n=13): 2072 kcal ; 51, 63 % carbohydrate ; 15, 47 % protein ; 33, 18 % lipid ; 13, 76 g dietary fiber 681, 72 mg calcium and 14, 66 mg iron. Males (n=7) 2767 kcal ; 54, 96 % carbohydrate ; 16, 60 % protein ; 29, 09 % lipid ; 18, 20 g dietary fibre 734, 80 mg calcium and 16, 58 mg iron. Conclusions: Emphasis should be placed on nutritional quality of the gluten-free diet, particularly as it concerns the iron, calcium and fibre consumption of women. Due to the small sample size and possible bias of survey participants the finding of this survey may not be representative of a larger celiac community.
