Sažetak
We are trying to use our previous examination of the usability of two-electrode impedance measurement for prediction of the lean meat percentage of pig halves on the line of slaughtering.
Measurements of the phase angle and impedance module were carried out on 40 pig halves of Hypor line fattend pigs using HPRLC-Meter-4284A impedance analyzer. The average carcass weight was 76.79 kg, length 97.8 cm, back fat thickness 13 mm, muscles 61.85 mm, pH45 6.01. Electrodes were pointed on the medial side of the halves into m. biventer cervicis et gracilis. The analysis of multifrequency data from 15-200 kHz showed that the most reliable resaults are obtained at the frequency of 50 kHz by pointing into m. gracilis 8 cm ventraly of the pelvic symphisis.
Results of the electrical measurements were compared to data obtained by two-point method. Linear regression analysis between the results obtained in that way shows moderately strong and statisticaly significant accordance inpredicting the rate of muscular tissue inexamined pig halves.
From everithing said above it could be concluded that the rate of muscular tissue in pig halves can be predicted by measuring the impedance of m. gracilis at the frequency of 50 kHz.
