Sažetak
There were researched the prediction possibilities of water and fat percentage in 30 chicken breast muscles by means of two - and four - electrodes measurings of modules and impedance phase angle. The analysis of multifrequency data obtained by the impedance analyser HPRLC-Meter-4284A at frequencies of 15,20,50,100,200,500 kHz and 1 MHz showed that the smallest variations by electric measurements are observed at frequencies of 15 kHz. The chemical composition of breast muscle in researched chickens is successfully predicted by impedance measurements obtained by four-electrodes HLC-Meter and our two electrodes bacterial device Carnetest III at the frequency of 15 kHz. In breast muscles the water percentage is convincingly predicted by impedance values obtained by the HLC-Meter (R2 = 0.857) and somewhat poorer results are obtained by the Carnetest III (R2 = 0.763). Both devices very convincingly predict fat percentage in that muscle (R2 = 0.942 resp. 0.973).
It results from everything, that by two electrodes measurements at slaughtery lines water and fat percentage in chicken breast muscle may be successfully predicted.
