Sažetak
Flour and bread are an important source of human dailiy dietary exposure to heavy metal lead and cadmium. The results of the chemical analysis of the trace amounts of lead and cadmium in food products are different from those when the elements are presented in solution, i.e.,they depend to a great extent upon the composition of the biological matrix. The methods of the destruction of the biological matrix also differ and therefore we aimed to investigate the content of lead and cadmium in the flour and bread prepared from that very same flour after wet and dry ashing of the samples. The wet ashing method would yield lead and cadmium values in the flour and bread then dry ashing method. This results may be important when assessing the maximal concentrarions of lead and cadmium in the human diet and the possible risks of human environmental exposure.
