Sažetak
The presence of some heavy metals in high concentracion, can result with undesirable changes in flavour, appearance and tasste of wines.Blue fining with pottassium hexacyanoferrate(II) is one conventional method for removing heavy metals from wines:This treatment is however, is some part disadvantageous, and the aim of a large number of investigationsis to find an alternative method to blue fining.In this work are presented results of fining wine with an syntethic PVI. Structure of PVI is based on structure ofPVPP, by realizing partial substitutionVP with VI where imidazole system is active site. The experiments was done in laboratory and industrial conditions. Changes in quantities of metal ions ( Cu, Fe, Zn, Mn) and phenol compounds werw measured during the process of fining. Results of this Experiments have shown that white wines with PVI have resulted by removing of high quantities of Cu, Fe, Zn and phenol compounds but not Mn.
