Sažetak
Catechins and their polymerized forms are the subject of many investigations because of their biological activities and improved pharmaceutical use. Experiments were carried out on 10 different grape varieties. Phenolic compunds were extracted from grape seeds and stems. Low molecular flavans were determined by HPLC on reverse phase using gradient elution. The obtained results showed the difference between "flavan finngerprint" for seeds and stems. The dominating monomer in the grape seeds depended on the cultivar. The main monomer in the stems was (+)-catechim. The dominating procyanidin dimer in the grape sees was dimer B2, and in the stems dimer B1. Significant variations in the amounts of catechin monomers and procyanidin dimers in grape seeds and stems were noticed. The low molecular flavan contents of grape seeds of Plavac mali cv. and Plavina cv. were higher than other cultivars. The extraordinary high concentrations of low molecular flavans were found in the stems of Okatica white grape cultivar.
