Sažetak
Flavonoids are idnetified in all vascular plants. These molecules are found in fruits, vegetables, nuts, seeds, stems and flowers, and are important constituents of the human diet. many flavonoids (as procyanidin dimers) are good free-radical scavengers. Because of their health-promoting activities it is iportant to know the mass amount of these substances in row plant material and processed food two. The daily intake of natural antioxidants is essential in an overall healthy diet. After the fractionation of polyphenolic extracts, the mass amount of procyanidin dimers B, in different parts of plant, was determined using high-performance liquid chromatography on reversed phase. The grape skin extracts contained lower amounts of dimers compared to stems and seeds. it is onteresting that, in the grape skin extracts, procyanidin dimers were present in higher amounts than monomers. The dominating dimer was procyanidin dimer B1. According to the obtained results the grape skin extract is not interesting row material for the production of these low molecular flavans. But, as fruits and vegetables, fresh or processed, are important part of human nutrition, determination of these bilogically active compounds is imortant in the evaluation of the quality of nutrition.
