Sažetak
To evaluate some hard biscuits produced in Croatia as a source of different minerals in nutrition, macro-elements Ca, Mg, Na and K were determined by inductively coupled plasma atomic emission spectroscopy (ICP-AES) in sweet classic white wheat flour biscuits and in enriched dietetic sweet and salted biscuits. Ca and Mg contents in different kinds of biscuit ranged from 20.43 up to 87.92 mg/100g and from 17.29-59.53 mg/100g, respectively. Since 100g of enriched biscuits can cover, depending on the kind of biscuits and needs of different populations, about 5-18% of recommended Adequate Intake (AI) for Ca and about 5-45% of AI for Mg (DRI, 2004), such dietetic confectionery products can be considered as a good additional source of these essential macro-elements in nutrition. Besides salted biscuit (750.18 mg/100g), sweet biscuits are rich source of Na (194.60-360.51 mg/100g) too, 100g of biscuits covering 13-24% of AI of Na for adult persons and 16-30% of AI recommended for children (4-8 year) and old people. All examined biscuits are poor sources of K (85.85-261.30 mg/100g) covering only 2-6% of recommended AI of K for adult persons. That results in very adverse relation of Na and K intakes with biscuits. The results point to the problem of high intake of sodium with sweet biscuits.
