Miloaevi (1), Irma Kalinovi (2), Vlatka Rozman (2), Anita Liaka (2) SA}ETAK Utjecaj atetne entomofaune na kakvou merkantilne paenice i braana prou avan je u okviru trogodianjeg istra~ivanja. Koriateni materijal je uskladiatena merkantilna paenica u silosima, a ispitivanje kvalitete reoloakih osobina i prisutnosti atetne entomofaune vraena su u laboratoriju silosa }itoprerada d.o.o. Valpovo i Zavoda za zaatitu bilja Poljoprivrednog fakulteta u Osijeku. Utvreno je prisustvo atetne entomofaune, kakvoa uskladiatene merkantilne paenice i reoloake osobine braana. Od atetne entomofaune utvreno je prisustvo Acarinae (grinja), primarnih atetnih kukaca reda Coleoptera i Lepidoptera, sekundarnih kukaca reda Coleoptera, mikofagnih kukaca reda Psocoptera, te korisnih kukaca  predatora reda Hymenoptera. Utjecaj atetne entomofaune o ituje se u promjeni kvantitativnih osobina uskladiatene paenice (sadr~aj vode, hektolitarska masa, primjese). Umanjenje kakvoe braana dobivenog meljavom zara~ene paenice o ituje se kroz promjenu reoloakih osobina: stabilnosti tijesta, upijanja vode, razvoja tijesta, rezistencije, energije, rastezljivosti, otpora, maksimalnog otpora, po etka bubrenja i viskoziteta. Trojstva 3, 31000 Osijek UVOD Uskladiatena merkantilna paenica u silosima i podnim skladiatima tijekom uvanja podlo~na je napadu i atetnom djelovanju razli itih kukaca (primarnih i sekundarnih vrsta oateenja). Gubici koji nastaju uslijed napada, izra~avaju se u postocima ukupnih godianjih uskladiatenih prinosa. Prema procjenama gubitaka na uskladiatenim proizvodima kod nas, gubici u podnim skladiatima i silosima iznose oko 3%, a u skladiatima privatnih proizvoa a oko 6% (Koruni, 1990.). Ukupni godianji gubitak uskladiatenih poljoprivrednih proizvoda u svijetu iznosi 4  10% proizvodnje hrane (Koruni, 1990.). U nekontroliranim uvjetima atetni kukci mogu izazvati zna ajne atete u vidu direktnog oateenja zrna, ato se manifestira kroz kvantitativno umanjenje uskladiatenih proizvoda. Drugi oblik atete nastaje naruaavanjem kakvoe merkantilnog zrna, ato utje e na loaiju kakvou kona nih proizvoda, 4 tipova braana, koji se dobivaju iz tako oateenog zrna paenice. Zara~enu paenicu, raznim vrstama atetnih kukaca i grinja, potrebito je tretirati kemijskim pripravcima, koji takoer u odreenoj mjeri utje u na promjenu kakvoe zrna. To je povezano s naruaavanjem kakvoe braana koja se dobiva iz tretirane merkantilne paenice. Mlinarska kakvoa braana se o ituje u koli ini izmeljavanja ili izbraanjavanja (vea koli ina izbraanjavanja  bolja kakvoa), granulaciji estica braana i sadr~aju pepela (Jinshui et al., 1998). Na braanu dobivenom izmeljavanjem paenice ispituju se reoloaka svojstva tijesta pomou aparata farinografa, ekstenzografa i amilografa. Cilj ovoga istra~ivanja je utvrditi atetnu entomofaunu merkantilne paenice uskladiatene u komorama silosa prije i poslije izvoenja kemijskih mjera zaatite; te utjecaj atetnih kukaca i grinja na kakvou i kvantitet braana, kao kona nog proizvoda za ljudsku ishranu. MATERIJAL I METODE Ispitivanja utjecaja atetne entomofaune uskladiatene merkantilne paenice na kakvou merkantilne paenice i braana, obavljena su u silosu PPK Valpovo d.d. }itoprerada d.o.o. Valpovo, tijekom tri godine (1998., 1999., 2000.). Iz silo komora tromjese no su uzimani uzorci merkantilne paenice te~ine 5kg, od kojih je na injen prosje ni uzorak te~ine 1 kg, u etiri ponavljanja. Uzorci su analizirani na prisutnost vrsta i brojnosti atetnika (metoda Subramanyam i Hagstrum, 1996) u laboratoriju Zavoda za zaatitu bilja, Poljoprivrednog fakulteta u Osijeku. Analiza paenice obavljena je prosijavanjem automatskim aparatom sa serijom sita promjera 0,5 3 mm. Nakon izdvajanja i prebrojavanja bioloakog materijala, obavljena je determenacija vrsta atetnika klju em Koruni, 1990. Zara~ena paenica, iz koje su izdvojeni atetni kukci, samljevena je u laboratoriju }itoprerade d.o.o. Valpovo u razli ite tipove braana (T-400, T-500, T-850). Iz braana su uzimani uzorci te~ine 2 kg u etiri ponavljanja, u kojem su laboratorijski odreivani prehrambeno tehnoloaki parametri (farinogram, ekstenzogram, amilogram), prema Pravilniku o metodama uzimanja uzoraka i metodama fizikalnih i kemijskih analiza za kontrolu kvalitete ~ita, mlinskih i pekarskih proizvoda, tjestenina i brzo smrznutih tijesta (Narodne novine, Slu~beni list br. 74/1988). Odreivanje fizikalnih svojstava paeni nog braana obavljeno je aparatima farinograf, ekstenzograf i amilograf tipa Brabender. Istim metodama ( Pravilnik ) obavljena je i analiza nezara~ene paenice atetnim kukcima, te paenica tretirana kemijskim sredstvima  fumigantima (preparat aktivne tvari aluminijev fosfid  Phostoxin pelete 5-6 grama/toni paenice) iz kojih se razvija plin PH3 fosforovodik. Prisustvo stranih mirisa u ispitivanim uzorcima paenice i braana obavljeno je standardnim organolepti kim metodama. Dobiveni rezultati prikazani su tabelarno i grafi ki, a obraeni su statisti ki analizom varijance (ANOVA) i t  testom. Ukupno je analizrano: 1998. godine  192 uzorka paenice; 1999. godine  192 uzorka paenice; 2000. godine  192 uzorka paenice. Sveukupno je analizirano tijekom tri godine istra~ivanja 576 uzoraka merkantilne paenice. REZULTATI I RASPRAVA Trogodianjim ispitivanjem uskladiatene merkantilne paenice utvreno je prisustvo primarnih, sekundarnih atetnih i predatorskih kukaca te grinja. Ono se o itovalo u razli itoj u estalosti tijekom tri godine kao i razli itom brojnoau, odnosno intenzitetu napada. Tijekom ispitivanja ukupno je utvreno (Grafikon 1.) 1608 imaga kukaca i grinja, od kojih su prema oateenju: 79 imaga ili 5% primarne vrste, te 649 ili 40% sekundarne vrste. Grinje su bile zastupljene s 298 imaga ili 19%, dok su ostale vrste ( praane uai, korisna vrsta A. calandrae) bile zastupljene s 582 imaga ili 36%. Od primarnih skladianih atetnika najzastupljenija je bila vrsta R. dominica (~itni kukulji ar) s 83%, a od sekundarnih atetnika najzastupljenija je bila vrsta C. ferrugineus s 94%. Ova istra~ivanje potvruju rezultati iz literature Flinn, et al., 1992., Fleming, 1998., White i Bell, 1990., koji navode da sekundarne vrste atetnika preferiraju lom i oateena zrna za svoj razvoj. Takvo prisustvo skladiane entomofaune manifestiralo se poviaenim temperaturama u silo komorama koja se kretala od 15(C u komorama sa slabijim intenzitetom napada, do 22 (C u komorama s izrazitim intenzitetom napada. Poviaenu temperaturu pratila je i poviaena vla~nost zrna, koja se kretala izmeu 12% i 15,5% u komorama s intenzivnijim prisustvom mikofagnih kukaca, reda Psocoptera - Liposcelis spp. U komorama s poja anim napadom vrste R. dominica organolepti ki je utvren slatkast miris paenice po medu, ato je karakteristi no za ovu vrstu atetnika. Number of harmful and useful insects species and mites in mercantile wheat by the years of searching  EMBED Excel.Chart.8 \s  U trogodianjem ispitivanju uzoraka paenice nakon izvraenih 5 fumigacija s pripravkom fosforovodika PH3, utvreno je ukupno prisustvo 94 uginula imaga atetnih i korisnih kukaca, te grinja (Tablica 1.) Od uginulih tetnih i korisnih kukaca, te grinja, najzastupljenije su bile vrste R. dominica s prisutnih 36 imaga i C. ferrugineus s 31 imagom, dok su sve ostale vrste prisutne u tragovima. Tablica 1. Uporedbom rezultata farinograma nezara~ene paenice i paenice nakon fumigacije uo eno je poveano upijanje vode, stabilitet paenice nakon fumigacije je manji, rezistencija ni~a, kvalitetni broj manji, a kvalitetna grupa se spustila s B1 na B2. Uporeivanjem polaznih farino vrijednosti s vrijednostima zara~ene paenice utvrena je razlika u poveanom upijanju vode, poveanom stupnju omekaanja, smanjenju kvalitetnog broja, a kvalitetna grupa se spustila u C2. Dobiveni rezultati naaih istra~ivanja potvruju dijelom rezultate Cortezrocha, et. al., 1997. (tablica 2.). Tablica 2. Farinogram Table 2. Uporeivanjem polaznih vrijednosti s vrijednostima dobivenim ispitivanjem zara~ene paenice utvrene su vrlo zna ajne razlike: energija se znatno smanjila, rastezljivost se poveala, smanjili su se otpor, maksimalni otpor i omjer otpor /rastezljivost (tablica 3.). ( EMBED Equation.3 )59,277,313,4749 Ispitivanjem kvalitativnih osobina paenice (sadr~aja vode, hektolitarske mase i ukupnih primjesa), dobiveni su rezultati: razlika u hektolitarskoj masi kod fumigirane paenice je za 2,6 kg ni~a u odnosu na polaznu vrijednost, dok je razlika hektolitarske mase kod zara~ene paenice ni~a za 8 kg. Sadr~aj vode kod fumigirane paenice je identi an polaznoj vrijednosti dok je kod zara~ene paenice ni~i za 2,09%. Primjese kod fumigirane paenice u odnosu na polaznu vrijednost su vee za 2,01%, dok su kod zara~ene paenice vee za 3,71% u odnosu na polaznu vrijednost (tablica 5.). Tablica 5. Takvo tijesto ne zadr~ava plinove, te su pekarski proizvodi loai. - Amilogram pokazuje sni~enje temperature po etka bubrenja kod paenice nakon fumigacije, te statisti ki zna ajnu promjenu viskoziteta braana dobivenog meljavom zara~ene paenice. HARMFUL ENTOMOPHAUNA IMPACTS ON QUALITY OF MERCANTILE WHEAT AND FLUOR SUMMARY Presence of harmful insects and mites is almost inevitable in mercantile wheat stored in warehouses. They cause significant damages and therefore it is necessary to perform pest control and chemical treatment. Study of harmful and destructive entomophauna impacts on quality of mercantile wheat and flour has been presented. Mercantile wheat stored in silos has been used in the study. Testing of quality of rheological properties and presence of harmful entomophauna was performed by labs within the silos }itoprerada d.o.o. Valpovo and by the lab of the Department of Plant Protection on Faculty of Agriculture in Osijek. Presence of harmful entomophauna, quality of mercantile wheat stored in a warehouse and rheological flour propertis were determined. The following harmful entomophauna were found: mites (Acarinae), primary pests of order Coleoptera and Lepidoptera, secondary pests of order Coleoptera and other insects found belong to Coleoptera, Psocoptera and useful insects of Hymenoptera orders. Influence of harmful entomophauna on quality of mercantile wheat is manifested by reduced quality of stored wheat due to decrease of water content and hectoliter mass. Lower quality of flour obtained by milling of infected wheat is manifested by change in rheological propertis: dough stability, water absorption, growth, resistance, energy, extensibility, maximum resistance, start of puffing up, and viscosity.
