Sažetak
An important component of determing the safety of food is the toxic element content. Large amounts of lead and mercury enter the environment because of the use of lead and mercury compounds in agricultural industry and also as a result of decomposition of explosives. Because of their significant toxic impact, ewen in low concentrations, a constant monitoring of water, soil, air and biological material is necessary, especially in the areas with permanent potential risk. The objective of this study was to determine lead and total mercury contents of various vegetables species from the areas affected by war-time operations. The lead concentrations were determinated by ICPAES and total mercury by GFAAS. The result of the analysis, with regard to the maximal concentration of lead which was 0.27 mg/kg and total mercury which was 0.01 mg/kg original matter showed that all the investigated samples of vegetables met the standard of the Public Health Regulation in Croatia which allowed up to 1.0 mg Pb/kg and 0.02 mg Hg/kg of fresh vegetables.
