Sažetak
In view of minerals importance in human metabolism and the fact that they are needed in definite concentrations the aim of research was to evaluate some kinds of vegetables as a source of trace element cooper in nutrition. Cooper concentrations were determined by inductively coupled plasma atomic emission spectroscopy method after microwave digestion in 20 samples of potatoes and 20 samples of cabbage from diferent locations. The results of analysis reveal depending on sample cooper content ranges from 2.82 to 9.85 mg/kg calculate on dry matter. In regard to results the investigated vegetables are sanitary safe and good additional source of cooper as an essential but potential toxic trace element.
