Sažetak
One of the important parameters of food health soundness is the presence of adverse or toxic substances. Due to chronic or subchronic exposure even the subeffective quantities of particular chemical can have a toxic effect on organisms. The aim of this research was to examine the applicability of some chronic toxicological tests in determination of exposure to xenobiotics present in concentrations below No Observed Adverse Effect Level (NOAEL) and below the detection limit of analytical instruments. In the present experiment mice were dietary exposed to malathion, Aroclor-1254 and 3-methylcholanthrene (3-MC) over the period of 12 months. The results of measured parameters (7-ethoxyresorufin-O-deethylase (EROD) activity, acetylcholinesterase (AChE) activity and glutathione (GSH) levels) showed statistically significant differences (α<0.05) when compared to control. These results suggest a suitable application of selected liver enzymes in targeted cereal quality control.
