Sažetak
The paper explores the possible contribution of local food and culinary traditions in Istria, and various food interests of foreign tourists in Istria applying cluster analysis, employing data from the visitor survey. Cluster analysis is an exploratory data analysis tool for solving classification problems. First part of cluster analysis involved statistics for visitor's eating habits in various restaurants in Istria. The object in this part of paper is to deduce profile of restaurant's visitors in Istria. Second part of cluster analysis involve various food which should be more represent in restaurant's menu according to visitors responses ; following are: clustering in relationship to recognition of traditional culinary attractions, importance of specific characteristics of particularly food items, and recognition of typical istrian's wine.
