Sažetak
The health status, physical and chemical parameters of milk become crucial elements in valorization and classification of milk in the EU countries. Due to market situation and sales of dairy products, on January 01 2003, Croatia introduced a new way of valorizing milk. This investigation was conducted to determine the qualitative and health aspects of milk produced at large dairy farms and compare these results to standards determined by the new legislation. Results of the investigation showed that a very small sample of milk tested (11.1 - 28.6 %) had smaller than 100, 000 BC/ml. The number of milk samples which met the criteria for standard milk quality (Ł 400, 000 SCC/ml) ranged from 65.7 - 77.3%, depending on the farm tested. The chemical composition of milk sampled met the criteria for standard milk quality in 44.4 - 71.2% for milk fat content, and 63.0 - 94.6 % for milk protein content. Poor management practices must be resolved by the introduction of new developmental programs based on customer demand and modern marketing goals using the latest European scientific accomplishments in the field of dairy industry.
