Sažetak
Based upon the fractionation soybean lecithin on laboratory apparatus (model I), the scale-up of process equipment was worked out to the pilot-scale (model II) by geometrical similatity method. Invariance of geometrical similatity of laboratory column and stirrer was 10.0 and 7.6 resp.; for pilot-scale column in was 10.5 and for the extraction column was 2.9 for the heghts, 2.5 for the diameters and 2.4 for the stirrers. It can be concluded that there is the approximate geometrical similatity of model I and model II. The efficienci of soybean lecithin fractionation with both models was compared with regard to the yield and selectivity.
