Sažetak
The dairy industry needs large amounts of water to process raw milk, it also discharges part of that water as wastewater and is one of the major polluters of the environment. The amount of wastewater discharged varies, depending on the amount of received milk. The dairy discharges an average of 0.2 to 10 L of wastewater per kg of processed milk. Milk is processed into a wide range of products such as UHT milk, yogurt, cheese, dairy desserts, etc., which also affects on the change in the chemical composition of wastewater. Also, alkaline and acid detergents are used to maintain hygiene in the dairy, which also changes the pH value of wastewater. Dairy wastewater has a high organic load (COD values range from 1500 to 3000 mg / L) which mainly comes from the presence of milk residues, carbohydrates (lactose and sweeteners used in the process), cream and / or whey. BOD5 / COD values range from 0.4 to 0.8 and show its good biodegradation. Due to stricter legal regulations and increasing awareness of ecology, nowadays all large dairies have wastewater treatment systems. Different technologies are currently available for wastewater treatment: anaerobic reactor to treat carbon pollution and producing biogas, membrane bioreactor and membrane filtration for treating and producing water for reuse. Some dairy plants already use these technologies and their feedbacks are positives.
