Sažetak
Graševina is the most common grapevine variety in Croatian vineyards. Since 2004, it was the object of clonal selection which has resulted in four certified clones. In this research, which includes grapes from clones OB-412 and OB-445, the fermentations were carried out with different strains of Saccharomyces cerevisiae yeast and sequential inoculation with Metschnikowia pulcherrima and Saccharomyces cerevisiae. The basic physicochemical parameters of must and wine were analyzed as well as individual organic acids and total phenols. With significant differences among individual parameters, samples inoculated with S. cerevisiae strains were better sensory evaluated.
