Sažetak
Phenolic compounds comprise a large group of organic substances and flavonoids are an important subgroup. Flavonoids are non-nutritive compounds of plants that have been intensively investigated during the past years due to their possible protective effects against chronic diseases. In vitro studies were able to demonstrate a considerable antioxidative activity for flavonols, flavones and most recently also for anthocyanins, mainly based on scavening of oxygen radicals. Phenolic compounds does consist of large number of molecules of heterogenous structure and because of that we have to use different methods for their isolation and identification. The methods are: quantitative measurement of total polyphenols, qualitative and quantitative measurement of specific polyphenol subgroups (flavonoids, non-flavonoids, procyanidins), measurement of each compound in specific structural subgroups (phenolic acids, flavan-3-ols). Identification of polyphenols: nuclear magnetic resonance (NMR), spectroscopy (the Folin-Ciocalteau colorimetric reaction, vanillin assay, the Porter Method, Bate-Smith procedure), circular dichroism (CD) and optical rotatory dispersion (ORD), mass spectroscopy, High Performance<sup><font color="red"><b>Bingo!</b></font></sup> Liquid Chromatography (HPLC).
