Sažetak
The demand for functional foods is on the rise and a lot of strategies for development of food with increased health benefits are being developed. Interspecies metabolite transfer proved to be a promising approach for obtaining plants with an increased content of specialized metabolites, which often correlates with increased health benefits forhumans. Therefore, using tea (Camellia sinensis) extract as a donor, and various cruciferous microgreens (broccoli, cauliflower, and kale) as acceptor plants, changes in their specialized metabolite content after the metabolite transfer were analyzed. Using a plethora of spectrophotometric assays, the content of various groups of specialized metabolites was analyzed and individual compounds were separated, identified, and quantified using high performance liquid chromatography (HPLC). It was revealed that the content of total phenolic compounds was increased in various treated groups, as well as the bioactivity of treated microgreens, particularly their antioxidant capacity and inhibitory activity against pancreatic lipase, an enzyme targeted in obesity treatment. Principal component analysis and hierarchical clustering revealed the significant separation of treated microgreens samples from control samples, indicating a high degree of change in specialized metabolism after the interspecies metabolite transfer, a clear indicator of interspecies metabolite transfer being a promising approach in plant biotechnology.
