Sažetak
Raspberries (Rubus idaeus L) are very rich with bioactive compounds like polyphenols, vitamins and minerals. Polyphenols have an effect on sensorial and nutritive characteristics of the plant. Leaves and seeds of raspberry, even though they have a significant number of bioactive compounds, are often treated as a byproduct of production. In this experiment, bioactive compounds were determined in leaves, seeds, and fruits of raspberries. Ultrasound- assisted extraction (UAE) was used for the highly efficient extraction of bioactive compounds from raspberries. Box-Behnken experimental design was used for the optimization of UAE. Total polyphenols, flavonoids, anthocyanins, carotenoids, chlorophyll, and antioxidant capacity were determined by spectrophotometer. Identification and quantification of individual anthocyanins and flavonols were obtained by LC-MS. Optimal conditions for extraction of polyphenolic compounds were obtained by using extraction solvent composed from ethanol:water (50:50, v/v) at extraction temperature 70 °C for 35 min in ultrasound bath (37 kHz) with solid to solvent ratio of 1: 6 g/mL (fruits), 1:15 g/mL (leaves), 1:150 g/mL (seeds). The highest level of polyphenols and flavan-3- ols were in the seeds (2853.03 mg/100 g and 713 mg/100 g) respectively. The most abundant anthocyanin in fruit was cyanidine-3-O-glucoside (38.74 mg/100 g).
