Sažetak
Plants belonging to Lamiaceae family contain a large number of bioactive compounds with the ability to promote better human health and prevent chronic diseases. Plants from this family have significant antioxidant activities due to its abundance of phenolic compounds. In order to protect functional properties of phenolics during processing or digestion, it is necessary to stabilize them using microencapsulation or emulsification. The aim of this study was to determine the influence of process parameters (i.e. rotational speed, emulsifier concentration and oil content) on zeta potential of oil-aqueous mint extract emulsions prepared with polyethylene glycol (PEG1500, PEG6000, PEG20000). Zeta potential was used as an indicator of electrokinetic potential in prepared colloidal dispersions. The emulsification was optimized using the Response Surface Methodology coupled with Box-Behnken experimental design. Analysis of Variance (ANOVA) was used to evaluate the significance of the process parameters on the zeta potential of the prepared oil-aqueous mint extract emulsions. Emulsifier concentration and oil content had statistically significant effect on the zeta potential of the oil-aqueous mint extractemulsions with PEG6000 while in the case of the oil-aqueous mint extract emulsions with PEG20000, emulsifier concentration influenced the zeta potential. The selected quadratic model was the most suitable one for prediction of zeta potential of oil-aqueous mint extract emulsions with PEG6000 (R2 = 0.7702). Estimated optimal conditions of the emulsification were as follows: for PEG1500, emulsifier concentration 2.10 %, oil phase content 34.99 %, mixing rate 15250 rpm ; for PEG6000, emulsifier concentration 3.52 %, oil phase content 35 %, mixing rate 15000 rpm ; for PEG20000 emulsifier concentration 2.04 %, oil phase content 25.98 %, mixing rate 15900 rpm.
