Aflatoxins (AF) are high toxic and carcinogenic mould metabolites with significant economic and health problems. A variety of food and animal feed are often contaminated with AF. Removal or reduce of AF level in foods and feeds has been a continuing challenge for the food industry. It is known that acid producing bacteria posses antimicrobial activities against pathogenic organisms. Strains of some probiotic bacteria such as Lactobacillus acidophilus and Bifidobacterium spp. or commercial dairy lactic bacteria have been found to inhibit both, mould growth and AF production (1). In this study we examined the capability of Lactobacillus rhamnosus strain GG (LGG), isolated from comercial yoghurt, to detoxification of aflatoxin B1. Standard AFB1 (40 ng/mL) was added to 48 hours-old bacterial cells in centrifuge tubes, incubated at 370C for 30 to 180 min, and centrifugated (7000 rpm for 5 min). The AFB1 that remained in supernatant was extracted twice with chloroform-methanol (9+1). Detection and quantification of AFB1 was done by the AOAC official TLC method (2). All the experiments were performed in duplicate. The amount of toxin recovered from supernatant indicates low detoxification ability of the LGG strains (efficiency of 15-25%), Much less from that reportered in literatura data (3). The recovery of the AFB1 was not influenced by the treatment time. LGG demonstrated lower recovery after 120 min incubation than those of 30 or 180 min treatment. The finding of this study suggest futher investigation of other lactic acid bacteria and influenece of bacteriall cell amount on detoxification efficiency.
