Sažetak
Modern hotel management is significantly different from the way the hotel system was managed in the beginning of the development of hotel industry. The hotel industry is a constant backbone of the development and growth of tourism in a particular environment, especially because of the ambit of business. Aside from standard functions of hotel management (planning, organizing, staffing, leading, and controlling), the emphasis is on managing with complete quality. In strategic planning of big hotel systems a special place is taken by the process of implementing, controlling and overall improving the quality of business and maintaining all standards in the hotel departments, through all hotel operations. The main focus of this paper is managing with complete quality in the hotel system, influenced by globalization trends. Emphasis is placed on international hotel systems, which to be a relevant result of these trends. The aim of the research is to present the concept of quality management, through the philosophy of hotel business. The purpose of this paper is to represent how strong the impact of globalization trends is in quality management and in the hotel system. Given that modern tourism accounts for 10 % of the world’s total domestic product, there is a noticeable upward in this amount. Needless to say that tourism is one of the main starters of economic activities at the world level, and the backbone of tourism is hotel systems, the need for this kind of research is increasingly pronounced.
