Sažetak
Rose Muscat presentes one od most important authentic cultivar in Istrian wine region of Cratia. It is one variety of red muscats family, and in association with specific agro-climatic condition on the Istrian region, obtains the particularly aroma. In connection with modern wine technology, it could be produce many wine types, especially sweet wines. The Institute for Agriculture and Tourism (Porec-HR) and Istituto Soc Tecniche Colturali dell?Sperimentale per la Viticoltura, Conegliano (TV), Italy were started in 1999 with project for improvement viticultural as well as wine technology for this interesting cultivar. The viticultural subproject included the observation of maturity curves (aoluble solids, titratsble acidity and pH og grape), improvement of growing practice, different time of harvest (early, normal and late), and focusing in the kinetic of free and bound monoterpenes in berry during ripening. Wine subproject included the development of technology for desert wine production. There were tested the break fermentation by different level of residual sugar (20, 40 and 70 g/l) and different time of maceration (2, 4 and 6 days), with other enological practices. After processing the wines were tested used the C.I.M.E.C. methods for determination of "global" wine quality. Using these methods were estimated organoleptic features as well as economical factors, which have impact on consumers and producers. Data analysis includes following indicators: analytic indicators, market and consumer preference, production costs, produce price and profits.
