Sažetak
A link between human health and dietary habits has lately been a focal point of interest in terms of efforts being made for maintaining and improving health and quality of live in individuals and population overall. Last few decades have been marked with dramatic changes in dietary patterns and increased consumption of food characterized with low nutrient value and quality. Alongside physical inactivity and addictions, poor diet consequently leads to increased risk of developing chronic diseases with background inflammatory processes such as cardiovascular diseases (CVD), diabetes, obesity and cancer. Oxidative stress plays a major role in development of CVD due to its direct action on the function of blood vessels and immune response activation. Functional foods have specific health benefits and are a step towards prevention of chronic diseases development in the future. Previous studies showed positive effect of n-3 polyunsaturated fatty acids (PUFAs) on microvascular reactivity, reducing oxidative stress and repairing the lipid profile with most of the research done with diet supplements on CDV patients. The aim of present research is to determine the effect of n-3 PUFAs enriched chicken eggs on young healthy individuals without previous endothelial damage or chronic inflammatory processes. n-3 PUFAs have so far shown a positive impact on reducing systemic oxidative stress in young healthy women due to increased blood antioxidative activity, while changes are not expressed in male group due to their significantly higher antioxidative capacity, basal and after the protocol. Further, flow cytometry measurements have shown significantly lower level of oxidative stress in granulocytes prior and upon PMA stimulation compared to control group which seems to be restricted only to male subjects. Results suggest protective effect of n-3 PUFAs on endothelial function in terms of reduced oxidative stress and increased antioxidative capacity in young healthy individuals.
