Sažetak
Changes of quality indicators for grains and wheat flours were studied in the recent years as climate conditions significantly differed in the period of winter wheat maturing. Four winter wheat varieties grown for four years at four Belje plots in the Baranja region were analyzed. In addition to determing indirect quality indicators of wheat grains, rheological indicators of flour quality and amylolytic activity were also determined. The research results showed that changes of quality indicators influenced by climate conditions were not more significant than changes of identical parameters obtained at various plots in the same year of wheat growing.
