Sažetak
Mycotoxins in beer are being investigated for years. Recent advantages in analytical methods pushed the boundaries of detection to deliver more accurate and precise compound measurement. Because time- and money-savings are the key elements, the new methods almost always inclued multi-mycotoxin analysis and the most popular and efficient methods today include LC-MS analysis. However, the matrix effect, for beer is a complex liquid, is always a problem, so the accuracy and efficiency of LC-MS multi- toxin methods still needs to be improved. Newer techniques have contributed to the revealing of emerging toxins that are not metabolites only from Fusarium spp., but originate from the raw material itself, such as plant toxins (cyanogenic glycosides), other bacterial, yeast and fungal toxins, or pesticides. The rapid development of detection methods demands an update on EU legislative on different (myco)toxins in malt and beer.
