Sažetak
The vast majority of culturable lactic acid bacteria (LAB) strains are generally recognised as safe and they have been traditionally used as biocatalysts in manufacturing of fermented products but also as viable cells in health promoting preparations. Numerous applications of LAB as biocatalysts in industrial bioprocesses have been based on restricted knowledge about physiology of this apparently cosseted group of Gram-positive non-sporulating bacteria. Consequently, the whole spectrum of quite upscaled procedures and commodities have been adopted by manufacturers and extremely well acknowledged by consumers. Nowadays, LAB, as whole cells or relevant sources of unique enzymes, have been identified as prosperous biocatalysts in efficient conversion of a diverse group of substrates and sustainable production of high-value commodities. One such strain is Lactobacillus amylovorus DSM 20531T, easily culturable strain that possesses industrially employable metabolic activity even under unfavourable environmental conditions, and excellent microbial source of intra- and extracellular enzymes with potential implementation in targeted mild reactions.
