Sažetak
In recent years, many research groups have positioned their focus on production of proteins and peptides (hydrolysates) from various oil cakes, which altogether can deliver promising outcomes to food and pharmaceutical industries. Protein hydrolysates derived from food proteins have been reported to possess a wide range of bioactivity including immunomodulatory, anticancer, antihypertensive, antioxidant, osteoprotective and antimicrobial effects. An important aspect of plant protein hydrolysates is their utilization as source of nutrients in processes with microbes and animal cell cultures.
