Sažetak
Main expertise of Laboratory for Antibiotic, Enzyme, Probiotic and Starter Cultures Technology (AEPSCT Laboratory) is development of new generations of probiotics and functional starter cultures, thoughtfully characterised and with specific features, such as production of surface (S)-layer proteins and bacteriocins. Our research in the field of industrial biotechnology is focused on development, formulation and production of probiotics and starter cultures that could be used as biotherapeutics and food supplements, but also in controlled fermentation processes in order to assure food quality and safety. Promising results of first probiotics lead to new generation of probiotics, which will contain mixture of probiotic strains with complementary characteristics, tailor-made for different gastrointestinal and urogenital diseases, or which will act as delivery systems for vaccines, immunoglobulins and other protein-based therapies. Production of powdered probiotics as living drugs was developed in AEPSCT Laboratory by application of different matrices and methods. Higher survival of microencapsulated probiotic cells during freeze-drying and in the detrimental conditions of the intestinal tract indicates protective role of encapsulating matrices. Presence of surface (S)-layer proteins of selected Lactobacillus strains, isolated and characterized in AEPSCT Laboratory, is an advantage regarding adhesive and immunomodulating properties of probiotic strains, while bacteriocin production and coaggregative properties are important mechanisms of competitive exclusion of pathogens and enhancers of colonisation of probiotic strains in intestinal ecosystem.
