Sažetak
The aim of this study was to investigate the possibility of impedance analysis in the assessment of shelf life and quality of frozen squids (Loligo gahi). Frozen squid samples were kept in the freezer at -18°C during the period of 12 months and were examined every 60 days. The HP 4294A Precise LCR meter with needle-type multi electrode array was used to measure impedance magnitude (|Z|) and phase (φ) at 200 frequencies from 100 Hz to 100 MHz. Protein solubility, water holding capacity, color parameters, textural parameters and weight have been determined. Results showed that impedance measurements, protein solubility, water holding capacity, texture and color parameters showed no correlation with the duration of storage. The results showed that the impedance measured at 10 MHz and 20 MHz can group the samples of frozen squid (Loligo gahi) into 3 distinctive groups.
