Sažetak
Since ancient times sea fennel has been used in folk medicine and culinary, also in last few years this plant became a rediscovered star of coastal cuisine. In this study, chemical composition, antioxidant and cholinesterase inhibitory activity of polar extracts of sea fennel collected in different seasons (February, April, June, August, October, and December) were investigated in order to draw conclusions about changes in their chemical composition and biological activity during a one-year vegetation period, as well as to find the possible connection between the presence of phenolics and related biological properties. Total phenolics, flavonoids and non-flavonoids were detected using spectrophotometric methods, while the individual phenolic acids were detected by high performance liquid chromatography. For antioxidant activity testing, four different antioxidant assays were used, while acetylcholinesterase and butyrylcholinesterase inhibition was tested using Ellman`s method. The obtained results point out the great influence of the plant vegetation period on content of phenolics and consequently on plant biological activity. Sample collected before flowering (in April) was, in most cases, superior in comparison to other extracts which opens new possibilities of its applications in different products and industries.
