Sažetak
Tangerine peels are waste from fruit juice production and as such have low price and potential to be further processed using novel food processing technologies. Environmentally friendly and low – cost row materials and technologies is forcing the food industry to develop new methods to guarantee the sustainability of the food chain. The extraction from waste is of great interest, since it has been shown that peel contain high concentration of bioactive compounds. It can be effectively used for promotion of nutritional and health effects. The physical effect of high intensity ultrasound on the improvement of various foodstuffs and changes on their properties such as better extraction, homogenization, drying, crystallization has also been observed at the last years. Extraction is a very important step in the isolation, identification and use of bioactive compounds and there is no single and standard extraction method. The influence of conventional (traditional extraction process) and ultrasound assisted extraction on the composition and mass fraction of bioactive compounds (total polyphenols) from tangerine peels were studied. The ultrasound assisted extraction is particularly attractive because of its simplicity and low equipment cost. The traditional techniques require long extraction time and have low efficiency. Moreover, many natural products are thermally unstable and could be degraded during the extraction if the temperature is increased. The conventional extraction methods, which have been employed for decades, requires both longer extraction time and relatively larger quantities of solvent. Ultrasound assisted extraction is one of the upcoming extraction techniques that can offer high reproducibility in shorter time, simplified manipulation, reduced solvent consumption, lower energy input and operates at decreased temperature levels. Material can also be processed using more eco-friendly solvents at room temperature which significantly lowers processing costs. Ultrasonic bath (380 W of effective ultrasonic power) were used for ultrasonic treatment under following operational conditions: Solvent [EtOH, water] ; Amplitude [50, 100] % ; Time of treatment [15, 30] minutes ; Frequency [37, 80] kHz at full cycle. Spectrophotometric analysis (measuring of absorbance at 520 nm) of total polyphenols are performed on obtained extracts. ANOVA (Analyse of variance), p – value (p<0, 05) indicate significant influence of solvent (ethanol – EtOH) on increasing of total polyphenolic concentration. Total antioxidant capacity was measured by DPPH method. All values of total antioxidant capacity were consistent with total polyphenols. There is no significant influence of amplitude, applied frequency, time of treatment at temperature of 30 °C of both solvent. Anyway, it can be concluded that ultrasound assisted extraction have significant benefits over classic extraction. Using ultrasound in this setting can ensure efficient reuse of waste from fruit and vegetable products for production of bioactive compounds.
