Sažetak
Olive oil is an important ingredient in the Mediterranean diet, well known for its delightful flavor and health benefits. Because of its precious attributes, olive oil is naturally more expensive than the other common types of vegetable oils thus presenting a preferable target for two types of adulteration. The first one is addition of low-quality olive oils while the second is mixing with low-priced vegetable oils. This is still the subject of extensive studies. Here we study the potential of ATR spectroscopy coupled with multi-way numerical analysis to detect and quantify adulteration of extra virgin olive oil with rapeseed and sunflower oils. Changes in ATR spectra arising from that adulteration corresponds mostly to the fatty acid bands due to the change in their content. A multilinear model that enables the detection of adulteration and quantification is established. This model is especially suitable because of its simplicity and cost-effectiveness. In addition, experimentally more demanding gas chromatography analysis was carried out, confirming the results obtained from ATR/PCA study.
