Sažetak
Human food is a very complex biological mixture and food processing, quality control and assurance and food safety are important and essential disciplines. High-performance and high-resolution analytical techniques as sample preparation methods, combined with different mass spectrometric methods are used to monitor the protein composition of foods and their qualitative and quantitative changes during the production process and storage. An overview is presented about the use of proteomics, glycomics and metabolomics methods in food technology and biotechnology. These techniques are used for characterisation and standardization of raw materials, process development, and detection of batch-to-batch variations and quality control of the final product of both foods of animal and plant origin. "Omics" are increasingly important tools in food safety control and assessment of food originality and authenticity, especially regarding biological and microbial safety, and the detection of manipulated and genetically modified food, as well as authenticity of organic and characteristic high quality local food.
