Sažetak
The improvement of the baker's yeast fermentation process control is the problem of constant interest for the researchers because of the huge industrial production capacities and large savings that can be achieved on the existing plants. The use of the process computers enables implementing the methods which can't be applied with the classical control systems. The control method which can be applied in real biochemical industrial process must fulfill certain requirements such as reliability, robustness and stability and in the same time must not be too complicated or too demanding in requirements on computer resources. Using the biomass estimation data, the control method is developed that allows respiratory quotient to be kept at the desired set point by adjusting the feeding profile of the substrate. Method is applicable regardless the biomass is in the exponential growth phase or in the phase of the oxygen limited growth. The on line biomass estimation method is developed on the base of maintenance equations. The input variables for the observer are concentrations of oxygen and carbon dioxide in outlet gas from the fermentor. Method is proven to be reliable and robust enough for the control purpose. The necessary process parameters needed for successful estimation of the biomass are only yield coefficients.
