Sažetak
The aim of this research was to determine the number of moulds and yeasts in the fresh raw milk. The milk was collected from 500 suppliers every day and were saved in special built buildings, socalled "collectors" that were equipped with milk cooling devices. The milk was transfered to the dairy in special tanks from which samples were taken before pouring of the milk, and used in laboratory tests.During the period of one year the milk samples were taken from the tank three times every seven days. Total of 144 group samples of fresh raw milk were analyzed. After the collection of samples, microbiological milk tests for the yeasts and moulds number were done during the period of four trimesters. Isolation of yeasts and moulds was done on Yeast glucose chloramphenicol agar, and their determination was done with biochemical series Integral System Yeasts. In the first trimester the yeasts and moulds number was 3.651/g, in the second 33.563/g, the third 79.982/g and fourth 2800/g. Isolated yeasts and moulds were from the genus Candida spp., Geothrichum candidum, Torulopsis glabrata, Saccharomyces cerevisia and Rhodotorula rubra.
