Sažetak
Regular vegetables consumption contribute to human health. Among vegetable crops, red beet is especially important because its consumption prevents occurrence and development of cancer. In human diet vegetables are an important source of vitamins, proteins, carbohydrates and minerals, especially microelements such as iron, manganese and zinc. Mentioned micronutrients are important for plants, as well as for humans, due to their oxido-reductive function in metalloenzymes. It is assumed that proper fertilization will increase the nutrient content of soil and thereby also of plants, which is reflected in the quality and overall nutritive value of vegetables. Hence, a field fertilization trials with red beet (Beta vulgaris var. conditiva) were carried out in hilly part of Croatia in Brašljevica (Žumberak area, year 2003) and Hrvatsko Polje (Lika area, years 2004 and 2005). The trial was set up according to the Latin square method with four treatments (unfertilized control, 50 t stable manure ha-1, 500 kg NPK 5-20-30 ha-1 and 1000 kg NPK 5-20-30 ha-1). The research aim was to determine the influence of different fertilization as well as environment on the iron, manganese and zinc content of the fresh weight of red beet root. Research results show that under different fertilization and environment iron ranged from 0.61 to 2.23 mg Fe 100 g-1 fresh weight, manganese from 0.36 to 0.76 mg Mn 100 g-1 fresh weight, zinc from 0.25 to 0.47 mg Zn 100 g-1 fresh weight. Although, the highest values of all three microelements were recorded in treatment without fertilization probably due to antagonistic influence of potassium, it is important to stress that average determined mineral values in red beet have significant level considering RDA for humans. Higher content of minerals could be reached by using micronutrient fertilizers in combination with stable manure and mineral fertilizers.
