Sažetak
This paper examined a recent trend of potential demand for rural tourism in Istria County from a perspective of socio-economic and demographic features of tourist staying in the near-by hotels. Characteristics of niche market are revealed throughout market research, which was done using probit (and logit) regressions and cluster analysis. Results of logit model estimation pointed out that preference for organic food consumption was an important factor determining demand of rural tourism as well as higher income of respondents. The view of this model is supported by wealthy respondents who prefer the consumption of organic food and rural tourism, because in this way they have formed an independent, self-sustaining cluster. Therefore rural tourism policy integrating organic farming and high quality product in rural environment would be necessary further or at least highly recommended which would attract wealthier tourists.
