Sažetak
Influence of crop level on phenolic composition and antioxidant activity in wine of cv. Teran (Vitis vinifera L.), a major autochthonous red grapevine variety in Istria (Croatia), was investigated in this study. Total phenolics, anthocyanin composition, color intensity and antioxidant activity (measured by DPPH method) were assessed in Teran wines produced from vines with crop levels ranging from 1, 63 to 4, 02 kg per vine (5, 8 to 14, 4 tons per hectare). Four crop levels were attained combining two shoot densities and two cluster thinning treatments. The treatment with the lowest crop level had the highest values of total phenolics, anthocyanins, color intensity and antioxidant activity, while the treatment with the highest crop level had the lowest values. Treatments with lower shoot density had more total phenolics, anthocyanins, higher color intensity and antioxidant activity, as well as treatments with cluster thinning applied. It is concluded that crop level influences wine phenolic composition and antioxidant activity of Teran, so shoot density adjustment and cluster thinning can be used as effective techniques in order to achieve desired wine quality.
