Sažetak
Asparagus maritimus L. is a rare asparagus species growing widely near the coast of Mediterranean. It is healthy and nutritious vegetable, containing proteins, carbohydrates, different group of vitamins and minerals. Objective of this work was to evaluate the antioxidant properties of Asparagus maritimus L. collected from near Adriatic see cost, Croatia, and dried by freeze-drying process. For obtaining of different asparagus extracts 40, 60 and 80% ethanol was used. The content of total phenolic compounds, scavenging capacity on DPPH˙ radicals and reducing power of obtained dry extracts has been investigated. The highest content of total phenols was determined for Asparagus maritimus L. extract obtained by 80% ethanol, while highest extraction yield was obtained by 40% ethanol as extraction solvent. All extracts were found to have radical scavenging capacity, but highest values were achieved for asparagus dry extract obtained by 80% ethanol. It was determined that all extracts have reductive capabilities, but these values are lower than that of ascorbic acid used as standard antioxidant.
