Sažetak
L. monocytogenes, a Gram-positive bacterium, causes a wide range of diseases, from localized enteritis to systemic infections in both immunocompromised and immunocompetent individuals. Many investigators have used murine listeriosis as a model system to define various factors and cells that are involved in the host response to intracellular pathogens. The effectiveness of immune reactions may be modified by nutritional factors. As biological constituents of olive oil, oleic acid rather than minor olive oil components is responsible for the modulation of immune functions, while minor olive oil components, such as polyphenols are potent antimicrobial agents. Although different studies have determined that olive-oil rich diets do not impair the host resistance to infection, they may have the impact in a moderate reduction of host defense to pathogens. Based on the fact that experimental infection with L. monocytogenes modifies immune response, we studied the effect of phenol-rich olive oil and phenolics extracted from virgin olive oil involved in the host modulation of lipid profile measured by the polar fatty acid (PL FA) composition.
