Sažetak
Honey quality is one of the most important parameters that have its influence on honey consumption due to its importance in human nutrition. In evaluation of honey quality it is important to determine its physicochemical properties. Honey samples that are available commercially, differ in quality which depends on various factors like climate, processing conditions, botanical origin, packaging, conditions and time of storage. The aim of this study was to determine physicochemical properties of 116 honey samples collected from different areas of Republic of Croatia and Republic of Slovenia. Proline mass portion and invertase activity were measured. Parameters have been measured following the instructions based on Harmonised methods of the International Honey Commission (IHC, 2002). Statistical analyses and the correlation between the analysed parameters have been performed. It was found that proline mass portion was between 27.317 – 1580.488 mg/kg and invertase activity, expressed as invertase number, was between 0.519 – 34.321. Results given by t-test showed differences between different types of honey. It is well known that invertase activity is one of the parameters that shows good conditions and time of storage. It was observed that samples were treated and kept properly, thus acceptable results were obtained. Almost all samples have shown to be suitable for the market and all tested samples comply with Croatian regulations.
