Sažetak
A large body of evidence indicates that regular consumption of small berry fruits may mitigate the risk of chronic disease like cardiovascular diseases and cancer, due to their high level of phenolic antioxidants. The objective of this study was to investigate nutritive value, phenolic composition and antioxidant properties of wild blueberries and cranberries harvested in an ecologically clean area in Bosnia and Herzegovina, Vranica Mountain. In comparison with literature data, the higher amounts of proteins and significantly higher amounts of ascorbic acid were found in analyzed fruit homogenates. To get insight in the phenolic composition of blueberry and cranberry juices freshly prepared from the frozen fruits, the total phenols, flavonoids and anthocyanins (unpolymerized pigments) were determined using spectrophotometry. Separation and quantification of phenolic compounds in the free form was done by HPLC. Antioxidant capacity was determined as free radical scavenging ability (DPPH) and ferric reducing/antioxidant power (FRAP). Both types of small berry fruits can be considered as excellent sources of phenolics with good antioxidant properties. The amount of total phenolics in blueberry juice (BJ) and cranberry juice (CJ) was 4085 mg GAE/L and 5138 mg GAE/L, respectively. In comparison to CJ, BJ showed significantly higher ferric reducing power (5068 µ ; ; ; M/L for BJ ; 2388 µ ; ; ; M/L for CJ), and DPPH radical scavenging ability (% Inhibition of DPPH* was 72.0 % for BJ and 46.4 % for CJ ; dilution 1:10) what can be related to almost 5-folds higher content of unpolymerized anthocyanins in BJ. Unexpectedly, the presence of free resveratrol monomers in CJ and BJ was not confirmed. Flavan-3-ol monomer (+)-catechin was the most abundant phenolic compound detected in the free form in BJ (4.98 mg/g). The small quantities of phenolic acids in the free form were detected in CJ. As far as the authors know, for the first time the presence of well known antioxidant phenolic compound tyrosol (0.02 mg/g) was confirmed in cranberry juice. The results of this investigation further support the view that wild blueberries and cranberries constitute an important source of potential health-promoting phytochemicals.
