Sažetak
Successful tourist destinations strategically create and communicate their gastronomic identities. The key instrument of this process is gastrospeak - an order of discourse which not only responds to tourists’ gastronomic desires but has also the potential to create them. Croatian tourist destinations, however, tend to be reluctant to found a destination’ s image on their local gastronomic heritage and to communicate that image far and wide. As a consequence, an enormous knowledge gap has been created which, if a Croatian tourist destination is to become truly competitive, has to be eliminated. This subsumes accumulating various aspects of knowledge: an awareness of tangible benefits resulting from a destination’ s gastronomic identity, learning about gastronomic habits of Croatia-visiting tourists, constructing Croatian gastronomic symbols and, finally, creating versions of gastrospeak to communicate a destination’ s gastronomic identity to tourists.
