Sažetak
Due to its high respiration rate, broccoli has a very short storage life compared to other vegetable species of the family Brassicaceae. The use value of broccoli flower heads may be prolonged by reducing the storage temperature, namely keeping broccoli in cold store. Starting from this fact, research was carried out to determine the durability of broccoli flower heads at room temperature and in cold store, at a given temperature and humidity. Mass loss and sensory changes (colour, taste, smell and consistency) of broccoli flower heads were monitored for the purpose of prolonging their use value. Use value of broccoli stored at an average room temperature of 15 oC, and relative air humidity of 74.5%, was 3 days. If cold-stored at an average temperature of 1.86 oC and relative humidity of 78.71%, broccoli use value was 6 days. The higher the temperature, the more intensive are the respiration and transpiration ; hence it is important for broccoli to be stored in a cold-store facility at a temperature of 0o C and relative humidity of 95%.
