Sažetak
In the framework of our research of the possibilities of biscuits production with enlarged share of dietary fibers, biscuits with different pure fibers (wheat fibers, oat fibers and apple fibers) or fiber rich raw materials (soya full fat flour, amaranth and carob flour) were prepared. The aim of this study was to determine the contents of main macronutrients, such as total proteins, carbohydrates and total fat, to determine total dietary fibers, to estimate their mutual relationship and to evaluate such biscuits in relation to new reference values for macronutrients (Food and Nutrition Board, 2005). Total dietary fiber content was determined by enzymatic-gravimetric AOAC 991.43 method, protein content by the automatic micro-Kjeldahl method, total carbohydrate content was estimated as a sum of water soluble carbohydrates (Luff-Schorl method) and starch (determined by the Ewers polarimetric method) and total fat content was determined by the Soxhlet method. Share of total dietary fibers ranged from 7.60 g to 20.78 g/100g, proteins from 7.56 g to 12.76 g/100g, total carbohydrates from 50.94 g to 62.18 g/100g and total fats from 18.18 g to 21.78 g/100g biscuit. Considering dietary reference intakes (DRI) given by Food and Nutrition Board for proteins, carbohydrates and fiber, 100 g of examined biscuits can satisfy approximately 15% up to 25% of daily needs of proteins for adult person, approximately 39% up to 48% of daily needs of total carbohydrates for adult person and approximately 25% up to 70% of daily needs of dietary fibers for adult person.
