Sažetak
Some by-products of food industries contain high proportion of plant cell walls, which can be utilized for human nutrition. Sugar-beet pulp, which is rich in dietary fibers, especially pectin's, and almost devoid of starch, is used in fibers-enriched foodstuffs. Dietary fibers may be obtained from plant by-products by very simple processes such as grinding for cereal brans or grinding and washing in water/ethanol mixture for beet fibers.
More sophisticated processes such as HTST extrusion cooking, thermomechanical and enzymatic hydrolysis and tribomechanical activation result in increased proportions of soluble dietary fibers of sugar beet pulp.
In this study, sugar-beet pulp were extruded under various conditions (temperature, water content, with/without enzyme Betanaza T, Pliva, Zagreb). Extruded and tribomechanical activated samples shows significant increase in soluble fraction of dietary fibers.
