Sažetak
Strawberry fruits (Fragaria ananassa cv. Elsanta) were hidroponicaly grown out of season (December) and fruits were hot water dipped for 3 min at 48º ; C (HWD), then stored for 7d at 1º ; C + 1d of shelf life in raw atmosphere (RA) or MAP. Total weight loss (WL) and vitamin C content were significantly different in all treatments. Control (C) and HWD fruits in RA had the highest WL followed by HWD-MAP and C-MAP fruits which had been also significantly different from each other. Soluble solids concentration (SSC), titratable acids (TA), SSC / TA ratio, the percentage of split fruits (SF) and fruits with soft tip (ST) showed no significant difference, although they have been increased in HWD and in HWD - MAP fruits. Skin colour showed no significant difference among treatments, but there has been significant difference in flesh Hue angle of C and C-MAP fruits in comparison to HWD and HWD-MAP fruits.
