Sažetak
In dieser Arbeit wurden die Metoden der mikrobiologischern Qualität des Jungrindfleisches beschrieben. Von der Oberfläche der Jungrindhälften wurden Abstriche und Abdrücke mittels Hygicult-Abdruckplatten (Orion Diagnostica, Finnland) wie auch Proben mittels der destruktiven Ausschnittmethode entnommen. In den von der Oberfläche der Jungrindhälften entnommenen Abstrichproben betrug die Gesamtzahl der aeroben Bakterien 3.43 + 0.71 log10/cm2. Die Gesamtzahl der Bakterien in den Ausschnitten bewegte sich von 2.00 log10/cm2 bis höchstens 4.34 log10/cm2 und betrug durchschnittlich 3.43 + 0.62 log10/cm2. In den Abstrich- und Ausschnittproben wurden sulfitreduzierende Clostridien in 30, 0 %, Proteus Arten in 22 %, E.coli und koagulase-positive Staphylokkoken in 4% der untersuchten Proben festgestellt. Mittels Hygicult-Abdruckplatten wurde die Gesamtzahl der aeroben Bakterien zwischen 0.48 log10/cm2 und 1.93 log10/cm2 festgestellt (durchschnittlich 1.03 + 0.29 log10/cm2), wobei E.coli in 6, 0 % und Enterobakterien in 24 % der entnommenen Abdrücke gefunden wurden. Das Abstrichverfahren stellt eine einfache und zuversichtliche Methode zur Verfolgung der mikrobiologischen Qualität der Oberfläche von Jungrindhälften dar. Demgegenüber stellt das Untersuchungsverfahren mit Hygicult-Abdruckplatten nur eine Orientierungsmethode zur Kontrolle der bakteriellen Verunreinigung der Jungrindhälften dar und kann die üblichen vorgeschriebenen Monitoringverfahren nicht ersetzen. ----------------------------------------------------------------------------------------------------------------------------------------------This work describes the procedure that can indicate microbiological quality of yearling beef. Swab and impression samples (by means of the Hygicult impression plates - Orion Diagnostica, Finland), as well as section samples, were taken from the surface of yearling beef sides. The average total number of aerobic bacteria established in the swab samples was 3.43 + 0.71 log10/cm2. Total number of bacteria found in section samples ranged from 2.00 log10/cm2 to a maximum of 4.34 log10/cm2, with an average value of 3.43 + 0.62 log10/cm2. In 30% of the swab and section samples the presence of sulphite-reducing clostridia, Proteus types were established in 22%, and E.coli and coagulase-positive staphylococci was found in 4%, of tested samples. Total number of aerobic bacteria determined using Hygicult impression plates ranged from 0.48 log10/cm2 to 1.93 log10/cm2, and on average amounted 1.03 + 0.29 log10/cm2. In 6% of impression samples, tests were positive to E.coli, while enterobacteria were found in 24% of impression samples taken from the surface of yearling beef sides. The swab procedure is a simple and reliable method for monitoring the microbiological quality of the surface of carcass sides. In contrast, the procedure involving Hygicult impression plates is simply an orientation method of checking the contamination of carcass sides, which cannot replace standard and regulated monitoring procedures.
